Is it possible to setup VV to copy only files with a .pst extension from a source loaction to a target location with the same directory structure? Also can I have VV delete the file on the source after a successful copy to the target?

Yes, add an include file filter in the profile settings *.pst

No, VV cannot delete files from source after copying.
