Is it possible to set a ViceVersa profile such that it will use security permissions that have only been granted to ViceVersa when accessing a network drive.

If so, given that CryptoLocker executes with whatever privileges are held by the user account then the remote location used by ViceVersa as the backup destination would not be accessible to CryptoLocker.

You can run ViceVersa "elevated" as admin and backup to a network location which is inaccessible to CryptoLocker if CryptoLocker is not run elevated. You can also run ViceVersa under any account as a service, using the VVEngine add-on:

If you encrypt the target, CryptoLocker will not touch files with extension .enc - also have archive copies of the target file (profile settings -> archive) would help.
