is there a method to target a file, but not the entire folder in which it resides ?

Yes, add an "include file filter" in the profile settings (VV PRO)

Example:
Source: c:\folderA
Include File Filter: c:\folderA\folder\file.ext
Include Folder: c:\folderA\folder\
