Can VV backup just the differences but to a alternate folder

I have a data volume (LIVE) and a copyof it (COPY), if some files are deleted from LIVE during the day, I wish to compare the 2 and have the deleted files copied (or moved) to a seperate folder for archiving. The plan is to then re-sync the LIVE to COPY after this (purge COPY), ready for the next day.
I would like this as a scheduled nightly task.
Can VV do this?

you could mirror source to target and use the file archiving http://www.tgrmn.com/web/kb/item22.htm function to move files from target to the archive folder.
